ALOO - GOBI

INGREDIENTS :

1 medium potato
1/2 medium cauliflower ( into florets )
1 medium onion ( finely chopped )
1 large tomato ( finely chopped )
Ginger garlic paste
1 tbsp corn flour
1 tbsp maida
2 tbsp curd
Oil for frying
Salt for taste
cilantro leaves for garnishing

MASALA :
1 tbsp chilli powder
1 tbsp turmeric powder
1 tbsp coriander powder
1/4 tbsp garam masala

METHOD :
* Boil the potato , peel the skin , mash it and keep it aside .
* Clean the florets , add half of the masalas , add some salt , the flours and marinate for 5-10 mins .
* Heat oil in a kadai , fry the florets and keep it aside .
* Again heat some oil , splutter mustard seeds , urad dal and fry the onions till brown .
* Now add the tomatoes , the remaining masalas and cook till done .
* Then add the fried florets and cook for a min .
* Add the potatoes and stir for a min .
* Finally add the curd and stir for a min and garnish with cilantro leaves .
* Serve with rotis/hot rice .

BREAD DAHI VADA

INGREDIENTS :
4 bread slices ( roasted )
1/2 cup peas ( boiled )
2 Green chillies
some ginger ( chopped )
1/4 cup gram flour
2 tbsp rice flour
salt
oil for frying

GARNISHING:
Coriander chutney
Tamarind chutney
Curd
Sev

METHOD :
* Mix the peas , chillies ,ginger, salt, flours, asafoetida and make small balls and flatten it .
* Deep fry them in oil and place aside .
* Roast the bread .
* Take one bread , spread coriander chutey on one side , pour in the curd , place the vada , again pour the curd and close it with another bread with chutney.
* spread tamarind chutney over the sandwhich , add some sev ,again pour some curd .
* Garnish with some coriander leaves .
* Will be a healthy and filling snack .

Chakkarai pongal

INGREDIENTS :

1/2 cup rice
3 tbsp moong dal
1 cup powdered jaggery
3 tbsp ghee
some raisins, cashews
1 1/2 cup water

METHOD :

* Fry the rice and moong dal in ghee.
* Pressure cook it with the water until 6 whistles .
* Put the jaggery in a kadai with sprinikled water and make it into liquid ( until kambi padam)
* Take the cooked rice and mix it with the paaghu .
* Fry the cashews, raisins, cardamon powder in ghee and mix it with the pongal .
* Remove from heat , serve hot/cold.

Gobi - Ball Pepper Gravy Chinese style


INGREDIENTS :

1 small cauliflower
2 small Capsicums
2 Medium tomatoes
1 Large onion
2 Red Chillies
Ginger - Garlic paste
Oil
Mustard , cumin seeds , urad dal
Coriander Leaves
Garam masala
Turmeric Powder
Salt for taste

For sauce :
2 tbsp soy sauce
1 tbsp Tomato sauce
1 tbsp chilli - garlic sauce
2 tbsp Honey
corn flour 2 tbsp
maida 1 tbsp


METHOD :

PREPARE THE SAUCE MIX :
*
Mix all the sauces first .
* then add the honey and stir well
* finally add the flours and stir well . Keep aside .

CURRY :

* Cut the cauliflower into florets and keep it aside .
* Marinate with chilli powder , turmeric powder , coriander powder , salt, asafoetida .
* Keep it aside for 15 mins .
* Heat some oil in a kadai and fry the florets until crisp .
* Transfer it into a bowl .

* Similarly fry the capsicum pieces and keep it seperately.

* Heat a tbsp of oil and splutter the mustard seeds .
* Fry the cumin seeds , Fenugreek seeds and urad dal .
* Fry the onion , Tomatoes .
* Aadd the ginger-garlic paste , turmeric powder and garam masala.
* Let it cook until the raw smell is gone .
* Add salt as required .
* Add the capsicums and stir gently .
* Pour in the sauce and cook till raw smell is gone.

* Finally add the fried florets and stir gently .
* Garnish with coriander leaves .
* Serve with rotis/hot rice.

FOR NON-VEG LOVERS :
For non-veg lovers , u can substitute gobi with chicken.
