EGGLESS MICROWAVE BANANA CAKE


INGREDIENTS :
2 cups Wheat flour
1 cup whole milk
2 Ripe bananas
1 cup sugar
1/4 cup raisins , cashews , badam
1 tbsp cocoa powder
1 tbsp baking powder
1/2 cup vegetable oil
1 tsp vanilla essence

METHOD :
* Blend the milk and bananas , add the sugar and blend well .
* Then add the oil and blend till the mixture thickens
* Mix all eth dry ingredients in a bowl.
* Add the blended mixture little by little
* Add the vanilla essence and mix well
* Add the nuts and mix well in one direction
* Grease a microwavable bowl , pour this batter and mw for 8 minutes
* Let it cool for 5 minutes and then transfer it into a plate
* Decorate as you wish and have the delicious banana cake !!!

EGGLESS MICROWAVE BLACKFOREST CAKE


I made this especially for IHM Birthday tonight , This is my first try for the black forest cake and it came out very well .
INGREDIENTS :
1 cup maida
1 cup sugar
200 gms condensed milk
1 bar Hershelys chocolate
1/2 cup milk
1/2 cup oil
1/4 cup raisins
100 gms butter
200 ml coke
2 tbsp cocoa
1 tbsp baking soda
1 tbsp vanilla essence
DECORATION :
Whipped cream
Sugar
Cherries
Grated chocolate
METHOD :
* Heat milk in a vessel , put the raisins in it and let it cool .* When cooled blend it into a fine mixture , add sugar and blend it again .* Add oil and blend it again , place it in a seperate container .
* Heat the chocolate in the microwave for 2 mins and keep it seperately.
* Heat the butter in microwave for a minute , add the condensed milk in it and mix well and keep aside .* Mix all the dry ingredients .* now add the butter mixture and mix it well , so there is no lumps.* Then add the blended mixture and mix well .* Now add tht vanilla essence , coke and mix well* Lastly add the chocolate and mix well* Keep it in the mw - high for 7-8 mins , let it cool completely
* Mix the cream and sugar and coat it on the cake when completely cooled.* Refrigerate it .* Take it out add some more cream and decorate it with cherries* Put the grated chocolates all over the cake .* Your Eggless microwave Black forest cake ready !!
* You can also split the cake into two horizontally , spread some cherry filling .*This will add more taste !! As mine was a small cake i left out this part !!

GREEN GRAM DHAL IDLI


INGREDIENTS :
1 cup green gram dhal
1/2 cup curd
2 tbsp grated coconut
4 green chillies
salt for taste
asafoetida
mustard seeds, urad dal
Oil

METHOD :
*soak dhal for 3 hours and drain all the water
* grind it coarsely till it comes to rava consistency
* grind the coconut , salt, asafoetida, chillies seperately and add to the dhal powder
* Add the curd and mix well till it comes to idli batter consistency
* Heat oil in a kadai , splutter mustard seeds and urad dal and add to the batter
* Pour the batter in the idli plates and steam it
* Hot , healthy , simple idli ready without any fermentation
* Enjoy hot with coconut chutney !!

RASAGULLA


INGREDIENTS :
1 galon milk
1 tbsp lemon juice
1 tbsp maida
1 cup sugar
3 cups water
1 cup ice cold water
rose essence
Raisins

METHOD :
* Boil the milk , and add the lemon juice and remove it from the stove .
* When the curd and water seperates , drain the water by using a cloth.
* Leave the curd int he cloth for overnight
* Squeeze out the water and mix the maida with the paneer .
* Blend it for 1 min and make sure the dough is soft and not sticky
* Make sugar syrup
* Make balls out of the dough and put it in the syrup
* Boil it in the stove for 5 mins
* Then add 2 spoons of cold water in the balls
* Again make it to boil
* repeat the process for 30 mins
* Now take out the balls and decorate it with raisins !!!
* It can be kept in the fridge and will be fresh for nearly 1 week !!

MICROWAVE MYSORPAK


INGREDIENTS :
1 cup besan flour
2 cups powdered sugar
1 cup ghee
2 tbsp milk

METHOD :
* Heat a vessel , and put the besan flour and fry till the flour gets heated
* In a microwavable vessel mix the flour, sugar , ghee so that there are no lumps
* Put in MW for 2 1/2 mins
* Take it out and stir well , and add the milk and stir well
* Again MW it for 1 min
* Take it out and stir it well
* Again mw for 1 min - take it out and stir well ( now the mix would have started to thicken)
* Again MW for 30 sec , mix well and transfer it into a well greased vessel and cut it into pieces,
* Let it cool and then transfer it into a air-tight container
* Ever soft mysorpak ready !!! njoi!!

SPINACH RICE


INGREDIENTS :
1 cup basmati rice
1 bunch spinach ( washed and finely chopped )
1 large onion ( Finely chopped and divided into two parts)
1/4 cup grated coconut
10-15 peanuts ( roasted and grinded )
2 red chillies
Ginger ( small piece)
Garlic 2 cloves
some fennel seeds
Salt for taste
Oil
Mustard seeds , fenugreek seeds, urad dal , cumin seeds

METHOD :
* Cook the basmati rice and keep it seperately
* Grind with little water :- coconut , peanuts , red chillies , half of the onion , Ginger , Garlic , fennel seeds and keep it seperately
* In a kadai heat oil , let the mustard seeds splutter, add the fenugreek seeds, urad dal , and let it turn brown .
* Add the onions , salt and turmeric powder and cook til it turns brown
* Add the Spinach leaves and cook till it is done by adding drops of water
* Now add thee grinded mixture and stir well
* Cook for another 2-3 mins
* Mix it with the rice and garnish with Cashews !!

MANGO RICE


INGREDIENTS :
1 cup basmati rice
1 raw mango
2 red chillies
1/4 cup grated coconut
salt for taste
turmeric powder
Oil

METHOD :
* Cook the basmati rice and keep it seperately
* Cut half mango into fine pieces and grate the other half
* Blend the grated mango , coconut , red chillies in a blender and keep aside
* In a kadai heat oil , splutter the mustard seeds, cumin seeds, urad dal and then add the chopped mango and let it cook .
* Add salt and turmeric powder and stir well
* Add the blended mixture and stir well and add some oil if needed
* When the raw smell goes off take from stove, mix with the rice
* Garnish with coriander leaves and cashews !!

SABUDHANA ROTI


INGREDIENTS :
1 cup sabudhana
1 medium onion ( Chopped finely )
2 green chillies
1 medium potato
salt for taste

MEHTOD :
* soak sabudhana over night
* Boil peel and mash the potatoes
* In a bowl mix the sabudhana , mashed potatoes , chopped onions, chillies and salt .
* Make small balls out of this mix , make it into flat discs by patting in ur palms.
* Heat a tava , greased with oil and place this disc and pour oil over its sides .
* After sometime turn this disc and let the other side cook till brown
* Serve with any chutney or sambar !!

Eggless microwave cake


Eggless Microwave Cake !!

INGREDIENTS :
1 cup Milk
1/4 cup Raisin
1/2 cup oil
3/4 cup sugar
3/4 cup maida
2 tbsp cocoa powder
1 tbsp baking powder
1 tbsp vanilla essence
1 handful of nuts

METHOD :
* Boil milk in a vessel , add the raisins and let it cool ;
* Blend the mixture till raisins are well blended
* Add the oil and blend well
* Add the sugar and blend again .
* Transfer it in a bowl .
* Add the maida flour little by little and stir in one direction
* Add the cocoa powder , baking powder , vanilla essence and stir well
* Finally add the nuts and mix well
* In a microwaveable vessel , grease it with butter and pourthe batter
* Microwave it for 10 mins ( do check in between )
* Let the cake cool for 2-3 mins and the transfer it into a plate and serve!!!
