Bagara Baigan

Ingredients :
7-8 small brinjals
2 onion ( sliced thinly )
oil 3 tbsp

For seasoning :

1 tsp mustard seeds
1 tbsp urad dal
1 tsp fennel seeds
pattai , krambu

For grinding :

2 tbsp groundnut ( roasted , without skin )
2 tbsp khuskhus
1 whold garlic
ginger

Masalas :

1 tsp turmeric powder
1 tsp red chilli powder
1 tsp garam masala
1 tsp chat masala (optional )

METHOD :

* Slit the brinjals into four slits ( like a flower )
* Place them in water
* HEat oil in a kadai and prepare the seasonion
* Fry onion in the oil with salt
* Meanwhile grind the khuskhus etc into a thick paste
* Add half of turmeric powder , chilli powder , garam masala to the paste
* Add little paste to each brinjals , inside the slitted portion
* Place the stuffed brinjals in the kadai and close with a lid
* Let it cook for some time
* Remove the lid and add the remaining masalas
* Let it cook for some more time
* Garnish with coriander leaves and remove from stove
* Serve hot with roti / even rice !!

Maccaroni Patties

INGREDIENTS :

Macaroni 1 cup
1/4 cup maida
2 tbsp ghee
1 tbsp oil
Salt as per taste

Vegetables :

2 onions
2 tomatoes ( small )
1 carrot ( grated )
cabbage 1.4 cup
2 green chillies
Ginger ( as needed )

METHOD :

* Boil the maccaroni well and drain the water and keep it aside
* Roast the maida in ghee and keep it aside
* Add the finely chopped veges to the macaroni
* Add the maida and salt
* Mix well and make a batter like chapathi batter
* Take a small ball of batter , press it with your palm
* Make 2-3 discs and toast it in a dosa tava
* Toast till both sided turn brown
* Serve with your favourite sauce !!

NUTS BALL

INGREDIENTS :
Badam 100 gms
Cashew 100 gms
Pista 50 gms
Dates 200 gms
Raisins 200 gms
Elachi powder - a pinch

METHOD :

* Powder badam , pista , cashew in a mixie
* Add dates and raisins and elachi and grind again
* Make them into small balls before the grinded heat goes off
* Eat your healthy snack !!!!!!!!!!!!!!!!!!!!!!!!!!!
* Can be stored in an air tight container for a week / 10 days !!

Masala Channa !!

Ingredients :

1 cup channa ( soaked overnight )
1 cup chopped small onion
2 tomatoes
2 tbsp ginger garlic paste

Grind 1 :

2 tsp kuskus
3 tbsp pottukadalai
1 piece pattai , saunf

Grind 2 :

1/4 cup coconut
1 tsp fennel seeds

Salt as per taste
2 tbsp coriander powder
2-3 tbsp chilli powder
1/2 cup water
10-15 pudina leaves

Method :

* Heat a pressure cooker in the stove
* Add water and let it boil
* Add channa , onion , tomatoes to it
* LEt it boil
* Add salt , coriander powder , chilli powder and close the cooker
* Let it cook for 5-6 whistles
* Open the cooker and let the mixsture boil again
* Add ginger garlic paste
* LEt it boil
* MEanwhile grind group 1 and add to the mixture
* Let it boil
* Grind group 2 and add to the mixture
* Let it boil
* Stir continously to avoid burning
* Add the pudina leaves and switch off the stove
* Clost the cooker and let it be so for another 10-15 mins
* Remove from heat and serve !!!
* This will be good with rice / idly / dosa / even rotis !!!

Rice patties

Ingredients :

1 cup left over rice
1 large onion , potato
2 medium tomatoes , carrots
2 green chilies
some curry and coriander leaves
salt as per taste
1 tsp garam masala ( optional )

Method :

* Boil and smash the potatoes well
* Chop finely the onion , tomatoes , carrot , chillies , curry and coriander leaves
* Smash the rice well with hands
* Add all the chopped veges
* Add salt , turmeric powder , garam masala and mix well
* Add the boiled potatoes and mix well
* Make the mixture into small small balls
* Heat the dosa tava
* Grease with oil
* Place one ball in the palm and press with another hand
* Let it become as a thick disc
* Place it in the tava and pour oil around it
* Place 4-5 discs at a time
* Let them turn brownish both the sides
* Remove from heat and serve with sauce / curd
* Enjoy your filling , tasty snack with a cup of tea !!

Potato Bajji

Ingredients :-

3 potatoes sliced as thin discs
1/4 cup gram flour
3 tbsp rice flour
Salt as per taste
Red chilly powder as per taste
Asafoetida powder
Water to mix
Oil for frying

Method :

* Heat oil in a kadai
* Mix all the ingredients except potatoes and oil and make a medium thick batter
* Dip a slice of potato in the batter and deep fry in the oil
* Similarly do all the slices
* Serve hot with sauce or any chutney !!

Mint - Peas Pulav

Ingredients :

1 Cup rice
1 Bunch Mint leaves
Handful of fresh peas
1 large onion ( finely chopped )
2-3 Green chillies
6-7 Garlic
Ginger small piece

For Seasoning:
1 tbsp oil
1 tsp mustard seeds ,
1 tsp chana dal

Method :

* Cook rice seperately and keep it aside
* Heat oil in a kadai and prepare the seasoning
* Add the onions and salt and fry till soft
* Add peas and cook till done
* Meanwhile grind the chillies , garlic , ginger , fennel seeds , mint leaves .
* Add the grinded mixture to the peas and fry till they are cooked
* REmove from heat and add to the rice
* Serve hot with your favourite raita !!!

Pori Upma

Ingredients :

1 Packet pori
1 large onion ( chopped )
1 large tomato ( chopped )
1 green chilly ( slitted horizontally )
Handful of roasted groundnuts
Salt as per taste
Little turmeric powder
Curry leaves
Coriander leaves for garnishing
1 tbsp oil
1 tsp mustard seeds , urad dal

Method :

* Heat oil in a kadai and splutter the mustard seeds and fry the urad dal
* Add the curry leaves and let it roast for a minute
* Add the groundnuts and roast till they get roasted
* Add the onion, salt and cook till they become soft
* Add tomatoes , green chillies and turmeric powder and cook till done
* Remove from heat
* Transfer the cooked ingredients in a bowl and mix the pori in it
* Garnish with coriander leaves
* Serve the wonderful snack !!

Tomato-Onion Kozhambu

Ingredients :
1 Medium onion
2 Medium tomatoes
1 tsp turmeric powder
Salt as per taste

For grinding :
2 tbsp coconut
1 tsp fennel seeds
2-3 garlic pods
1 tsp poppy seeds
2 Green chillies

For seasoning :
1 tsp oil
1 tsp mustard seeds
1 tsp urad dal
2-3 cloves
Cinnamom
1 Elachi ( powdered )

Method :

* Heat oil in a kadai and prepare the seasoning
* Fry the onion with salt till they turn brown
* Add the tomato and the grinded mixture
* Add the turmeric powder
* Cook till tomatoes are cooked
* Add some cilantro leaves and remove from heat
* Serve with rice / idli / dosa!!

Idli Sambar

Ingredients :

1 Cup Yellow Moong dal
1 Cup veges : carrot , potato , brinjal , drumstick
2 Green chillies
Some ginger
4-5 Garlic cloves
Salt as per taste
1 tsp turmeric powder
Finely chopped coriander leaves

For seasoning :

1 tbsp oil
1 tsp mustard seeds
1 tsp urad dal
1 tsp fennel seeds
Some Curry leaves

Method :

* Pressure cook all the veges , dal , salt, masala for 6-7 whistles
* Heat oil in a kadai , prepare the seasoning
* add it tot he sambar
* Serve hot with idli / sambar

Onion Raita

Ingredients :

1 Medium onion
1 Cup curd
Salt as per taste
Some finely chopped coriander leaves

For grinding :

1 tbsp grated coconut
1 green chilly
Small piece ginger

For seasoning :

1 tbsp oil
1 tsp mustard seeds
1 tsp urad dal

Method :

* Beat well the curd and add little water
* Slice the onion thinly
* In a bowl mix in the salt and onion well and add it to the curd
* Grind the coconut , chilly and ginger with little water
* Add it to the curd
* Refrigerate it for 30 minutes before serving
* Heat oil in a kadai and prepare the seasoning
* Add it to the raita
* Garnish with coriander leaves
* Serve chill !!!

Soya Chunks Curry

Ingredients :

1 cup soya chunks
1 tsp turmeric powder
1 tsp red chilly powder
salt as per taste
A pinch of asafoetida

For seasoning :
1 tsp oil
1 tsp mustard seeds
1 tsp urad dal

Method :

* Cook the soya chunks with salt till soft
* In a kadai heat the oil and prepare the seasoning
* Put in the chunks and add the masalas
* Mix well till mixed well
* Finally add the asafoetida andremove from heat
* Serve hot with rice and rasam ,

Toor dal pappu

Ingredients :

1 Cup toor dal
1 medium onion
1 medium tomato
1 cup chopped veges : carrot , potato , brinjal ( optional )
1 green chilly , small piece ginger
3-4 garlic
salt as per taste
turmeric powder - 1 tsp

For seasoning :

1 tsp oil
1 tsp mustard seeds
1 tsp fennel seeds

Method :
* Pressure cook all the ingredients - dal , veges , etc
* Leave it for 6-7 whistles
* Remove it from the cooker
* In a kadai heat the oil and prepare the seasoning
* Add the dal mixture to the kadai and let it boil
* Garnish with coriander leaves and serve with idli / dosa

Rava idli

Ingredients :

1 Cup Rava
1 Cup Curd
Salt as required
1 onion , 1 tomato ,1 Green chilly , Small ginger
1 carrot , Little cabbage , ( all chopped finely)
Some finely chopped coriander

For seasoning :
1 tbsp oil
1 tsp mustard seeds
1 tsp urad dal

Method :

* Roast the rava till it turns nice aroma arises
* soak it in curd for 30 minutes
* Heat oil in a kadai , prepare the seasoning and fry the chilly , ginger , tomato , onion.
* Add them to the curd-rava mixture .
* Add all the other ingredients and mix well
* Grease the idli plates and and steam the idlies for 10 minutes
* Remove from heat and serve hot with sambar and chutney !!

200th Post ...... Bombay Halwa



Ingredients :

1 cup sabudhana
1 cup Maida
2 cups corn flour
4-5 cups sugar
3 cups of ghee
1 1/2 cup water
A pinch of cardamon powder
A pinch of food colour
1/4 cup of chopped nuts
Juice of lemon




Method :

* Soak the sabudhana for 8 hours with 2 cups of water
* Soak the flours for 8 hours with 2 cups of water
* Melt the sugar in a kadai till the sugar melts
* Mix in the sabudhana and flours
* stir continously
* Add the ghee by one spoon at a time
* After adding half a cup of ghee add the lemon juice and food colour
* Stir in all the remaining ghee
* Stir in continously till a mass forms .
* Add the chopped nuts and mix well
* Grease a plate and pour the halwa in that
* Level the halwa mix and let it cool for 20 minutes
* Slice them and store it in a air tight container !!!!

Wheat rava adai


Ingredients :

1 Cup Wheat rawa
1 Medium onion
1 Green chilly
Ginger
Curry leaves
Salt as required

Method :

* Soak the wheat rawa for 2 hours
* Grind it coarsely
* Slice onion , chilly , ginger into fine pieces
* Add them , leaves , salt and mix well
* Heat a dosa griddle and grease well with oil
* Pour some batter in the middle of the tawa
* Spread it into a thick circular disc
* Pour some oil over it's edges
* When both sides are cooked remove from heat
* Serve hot with chutney /sambar !!

Gotsu


Ingredients :

3 Medium eggplants
1 medium onion
1 Medium tomato
Lemon size tamarind
3 green chillies
Ginger garlic paste
Salt as required
1 tsp turmeric powder

For seasoning :

1 tbsp oil
1 tsp mustard seeds
1 tsp urad dal
1 tsp jeera

Method :

* Slice the eggplants into small cubes and put them in water
* Slice the onion and tomato into fine pieces
* Slit the chillies and keep them aside
* Soak tamarind in warm water and extract the pulp
* Heat oil in a kadai and prepare the seasoning
* Fry the onions with salt and turmeric powder
* Add the tomato pieces and chillies
* Cook till done
* Add the eggplants and fry for a minute
* Add the tamarind extract
* Add water just till the eggplants are sunk
* Cover the vessel and Let it boil
* When the mixture thickens remove from heat
* serve hot with Pongal / Idli / Dosa

Banana Halwa


Ingredients :


2 ripe bananas

3 tbsp ghee

2 tbsp sugar

2 tbsp chopped nuts

1/4 cup milk

A pinch of Elachi powder

Method :


* Mash the bananas well

* Heat ghee in a kadai

* Put the bananas and fry till they turn brown

* Add the milk and cook till all the milk is absorbed

* Add the sugar and mix well

* Add in the nuts and stir well

* Add the elachi powder and Remove from heat

* Serve hot/cold !!

Cauliflower green curry


Ingredients :

1 Medium cauliflower
1 Bunch Coriander leaves
1 Green chilly
Ginger - Garlic paste
1 Small onion
Salt as required

For seasoning :

3 tbsp oil
1 tsp mustard seeds
1 tsp urad dal

Method :

* Break the cauliflower into small small florets and keep it in hot water
* Slice the onion into fine pieces
* Grind the coriander leaves and chilly with little water
* Heat 2 tbsp oil in a kadai and fry the cauliflower with salt
* Remove from heat and keep it aside
* Heat remaining oil in a kadai and prepare the seasoning
* Fry the onions and paste with salt
* Add the grinded mixture and fry for a minute
* Add the cauliflower florets and cook by closing the vessel
* When all the water is absorbed, remove from stove
* Serve hot with your favourite rice !!

Spring Onion Rice




Ingredients :
1 Cup Basmati rice
2 Bunches of Spring onions
1 Green chilly
Ginger - Garlic paste
Salt as required

For seasoning :
1 tbsp oil
1 tsp mustard seeds
1 tsp urad dal

Method :

* Cook the rice and keep it seperately
* Heat oil in a kadai and prepare the seasoning
* Slice the spring onions into small pieces
* Fry the paste , chillies and spring onions with salt
* Fry for 2 minutes and remove from heat
* Mix with rice and serve hot !!!

Potato masala fry


Ingredietns :

2-3 large potatoes
1 tbsp red chilli powder
2 tbsp curd
Salt as per taste
1 tsp turmeric powder
A pinch of asafoetids
1 tsp garam masala
3-4 tbsp oil

Method :

* Boil the potatoes , but still they should be firm
* Remove the skin and slice as small small thick circular discs
* In a bowl place the slices and mix all the ingredients except oil
* Let it marinate for 20 minutes
* Heat a kadai and heat the oil
* Fry the slices till both sides turn brown
* Remove from heat and serve with rice and dal !!

Chocolate Balls


Ingredients :

1 tin condensed milk
10-15 Small size chocolates
Handful of finely chopped nuts
3 tbsp ghee
3-4 tbsp milk powder
1/4 cup Maida
1 tsp cocoa powder
1 tbsp vanilla essence

Method :

* In a kadai mix the condensed milk and chocolates and heat
* Heat till the chocolates melts and gets mixed well
* Remove from heat
* In a bowl , mix the maida , cocoa powder , milk powder , essence and nuts
* Add this to the milk-chocolate mixture
* Add the nuts to it
* Mix well to make into a soft dough (will be as soft as chapathi dough )
* Apply ghee to your palms and make small small balls
* Serve the yummy chocolate balls !!!!

Sweet vada


Ingredients :

1 cup urad dal
1 1/4 cup sugar
1/2 cup water
A pinch elachi
Oil for frying

Method :

* Soak the urad dal for 1 hour
* Make small small vadas
* Make sugar syrup till it has thread consistency
* Add the elachi powder in it
* Place the vadas in the syrup as soon as you take out from oil
* Let it be in thee syrup till the next set of vadas are done
* Serve hot !!

Urad dal / Ulundhu vadai

Ingrediets :

1 Cup urad dal
1 green chilly
Ginger
Salt as per taste
2 tbsp rice flour
A pinch of asafoetida
Oil for frying

Method :

* Soak urad dal for 1 hour
* Grind with little water till smooth
* Chop finely the ginger and chilly
* Add salt , ginger , chilly , asafoetida and rice flour and mix well
* Heat oil in a kadai
* Wet your hands with water .
* Take a lemon size of flour , pat it into a small disc with your palm
* Put it in the oil
* Place 4-5 discs at a time
* Deep fry them until both sides turn brown
* Drain excess oil and place it in a bowl with tissue paper
* Serve hot with chutney / sambar !!

Nombu vella adai


Ingredients :

1 Cup rice
2/4 cup thattapayaru ( soaked overnight and cooked )
3/4 cup jaggery
A pinch of cardamon powder
2 tbsp ghee

Method :

* Soak the rice overnight
* Towel dry the rice and grind it smooth
* Heat a kadai and fry the rice for just a minute
* Switch off the stove and let the flour be in the kadai
* Stir in between
* Heat another kadai and melt the jaggery ( with only a very little water )
* Add the thattapayaru , flour , cardamon powder and mix well
* Add the ghee little by little and mix well
* REmove from heat and let it cool
* Make small balls out of the flour
* Make thick discs and steam them
* Serve hot !!

Nonbu uppu adai


Ingrediets :

1 Cup raw rice
2/4 cup thattapayaru ( saoked overnight and cooked )
11/2 cup water
1 green chilly
some ginger
Salt as per taste
1 tbsp oil
1 tsp mustard oil
1 tsp urad dal
A pinch of asafoetida

Method :

* soak the rice overnight
* Place the rice in a towel till all water is absorbed
* Grind it till smooth
* Heat a kadai and fry the flour till nice aroma arises
* Heat oil in a kadai and prepare the seasoning
* Fry the chillies and ginger
* Add 1 cup of water
* Let it boil
* Then add salt and asafoetida powder
* Simmer the stove and slowly add the flour and the thattapayaru
* Stir continously
* Add the remaining water continously
* Mix well and remove from stove
* Let it cool
* Make them into small balls
* Make thick circular discs and steam them for 10 minutes
* Remove from heat and serve hot

VEGETABLE SANDWICH


Ingredients :

For stuffing :

1 Cup of chopped vegetables ( carrots , beans , corn, peas , cauliflower , potato , cabbage )
1 Medium onion
1 medium tomato
2 piece garlics
Ginger small piece ( all chopped finely )
Salt as per taste

Masalas:

1 tsp turmeric powder
1 tsp garam masala
1 tsp red chilly powder

For seasoning :

2 tbsp oil
1 tsp mustard seeds
1 tsp urad dal / chana dal
1 tsp jeera

8 Pieces of bread
4 tbsp of ghee

Method :

* Heat a dosa griddle and greas it with ghee
* Toast the bread pieces with butter
* Keep them aside
* Heat oil in a kadai and prepare the seasoning
* Fry onion in the kadai with salt
* Add the tomato and the masalas and cook till done
* Add all the chopped veges and add little water
* Cook until they turn soft by covering the kadai
* Garnish with coriander leaves and remove from heat
* Place some of the stuffing between two pieces of bread
* Serve the yummy yummy snack / breakfast hot !!!!!

VEGETABLE SAMOSA


Ingredients :

For stuffing :

1 Cup of chopped vegetables ( carrots , beans , corn, peas , cauliflower , potato , cabbage )
1 Medium onion
1 medium tomato
2 piece garlics
Ginger small piece ( all chopped finely )
Salt as per taste

Masalas:

1 tsp turmeric powder
1 tsp garam masala
1 tsp red chilly powder

For seasoning :

2 tbsp oil
1 tsp mustard seeds
1 tsp urad dal / chana dal
1 tsp jeera

For covering :

1 cup maida
1/4 cup rice flour
Salt ( little )
1 tbsp oil
Water ( to knead )

Oil for frying

Method :

* HEat oil in a kadai and prepare the seasoning
* Fry onion in the kadai with salt
* Add the tomato and the masalas and cook till done
* Add all the chopped veges and add little water
* Cook until they turn soft by covering the kadai
* Garnish with coriander leaves and remove from heat
* Let it cool
* Meanwhile knead a soft dough for the covering with the flour and the other items
* Make a thin circular discs ( like thin chapathis)
* Heat the oil for frying in a kadai
* Place a small amount of the filling in the discs
* Fold it in a triangular shape ( mine didnt come rightly though :-) )
* When the oil gets heated deep fry them .
* When both sides turn brown , drain excess oil and remove from heat
* Place it on a paper towel to absorb the remaining oil
* Serve hot with ketchup !!

Kaala Channa Curry



Ingredients :

1 Cup Kaala channa ( black channa )
1 Medium onion
1 tsp turmeric powder
1 tsp chilly powder
1 tsp garam masala

For seasoning :

1 tbsp oil
1 tsp mustard
1 tsp urad dal / chana dal

Method :

* Soak the channa overnight
* Pressure cook till soft with salt
* Heat oil in a kadai and prepare the seasoning
* fry the onions with salt and masala powders till they turn brown
* Add the channa and mix till done
* If wished garnish with coriander leaves
* Serve with rice and sambar !!

Chilly Chapathi !!


I love to have chilly parotta in restaurants . I donno to do parotta so tried with chapathis . To my surprise it came out very well . Here goes the recipe .

Ingredients :

4-5 Chaptathis
2 Medium onions
Tomato paste ( or blend 2 large tomatoes )
2 tbsp chilly powder
1 tsp garam masala
1 tsp turmeric powder
1 tsp ginger garlic paste
Oil for frying
Coriander leaves for garnishing
Salt as per taste


For garnishing :

1 tbsp oil
1 tsp mustard seeds
1 tsp chana dal
1 tsp fennel seeds
4-5 fenugreek seeds

Method :

* Cut the chapathis into small small pieces
* Fry in the oil and keep it aside
* Meanwhile , heat oil in a kadai and prepare the seasoning
* Slice finely 11/2 onions and fry them in the oil with salt until turn brown
* Add the tomato paste and the masala powders and cook till raw smell goes
* Remove from heat and add in the chapathi pieces
* Slice the remaining half onion and coriander leaves into very fine pieces
* Garnish with them
* If liked add little lemon juice over it ( ** OPTIONAL ** )
* Serve hot !!

Banana Ghee roast


Ingredients :

2 Ripe Bananas
1/4 cup Ghee
Honey ( optional )

Method :

* Slice the bananas into thin slices
* Heat a dosa griddle and grease it with ghee
* Coat both the sides of the banana slices with ghee
* Place them on the griddle
* Turn them upside down when one side has turned brown in colour
* When both sides are done , place them in a plate and pour honey all over
* Enjoy the treat !!!

Brinjal Crispies


Ingredients :

2 Brinjals
Oil
Salt as required

Method :

* Slice the brinjals as thin circular discs
* Heat a dosa griddle
* Place the discs 1 by 1 , and pour some oil
* Let it turn brown on both sides .
* Place them in a bowl and add some salt ( and pepper )
* Have it with rasam rice or even as a snack !!

Shahi rice


Ingredients :

1 Cup Basmati rice
1 Medium potato
2 Medium Carrots
Salt as per taste
Water to cook (21/2 - 3 cup water)

For grinding :

2 tbsp grated coconut
2 Green chillies
Ginger
2 Garlic pieces
1 tsp saunf

For seasoning :

1 tbsp oil
1 tsp mustard seeds
1 tsp urad dal

Method :

* Cut the potato and carrots into small pieces
* Heat oil in a kadai and prepare the seasoning
* Fry the veges with salt
* Add the rice and fry for another minute
* Grind the ingredietns for grinding with little or no water
* Add the grinded masala
* Add required amount of water and let it cook
* Stir gently so that the rice doesnt break
* When done , garnish with coriander leaves .
* Serve hot with your favourite curry !!

Pacharisi adai

Ingredients :

1 Cup raw rice
1 Cup dal mixture ( toor dal , urad dal , moong dal , chana dal )
Salt as required
2 Whole red chillies
1 Small onion

Method :

* Soak the rice , dal s seperately for 2 hours
* Grind the rice , dal , chillies , salt will little water
* Slice the onions into small pieces and add it to the batter
* Heat a dosa griddle and grease it with oil
* Pour a small amount of batter in the middle of the griddle and spread it as thick circular disc.
* Pour some oil over its edges
* Turn the other side when one side turns brown
* Remove from heat when both the sides turn crispy
* Serve hot with sambar !!

2 Big Brocolli bunch
2 tbsp Rice flour
2 tbsp besan flour
salt as required
1 tbsp chilli powder
1 tsp turmeric powder
Asafoetida powder
Water to mix
Oil for frying

Method :

* Break the brocolli bunch into florets
* In a bowl , place the florets
* Add all the dry ingredients and little water
* Mix well as the flour coats well in the brocolli
* Keep it aside
* Heat oil in a kadai
* Fry the florets till crisp
* Drain excess oil and serve hot !!!

Soya dosa / dosai

Ingredients :

1 Cup soya chunks
1/4 cup sooji / rava
1/4 cup Rice flour
1 cup Curd
Salt as required
1 tsp jeera
1 tsp pepper ( milagu )

Method :

* Soak soya chunks and sooji in curd for 15 minutes
* Blend this mixture very smoothly and transfer it in a bowl
* Add the flour and mix without lumps
* Add the salt , jeera and pepper
* Mix thouroughly
* Heat a dosa griddle and grease it with oil
* Make the tasty dosa !!
* Serve hot with sambar and chutney !!!!

Mixed Vegetable kootu

Ingredients :

1 Cup of Chopped Mixed veges ( carrot , peas , beans , cauliflower , broccoli , potato )
Handful of peanuts
1/4 cup Toor dal
Salt as required
1 tsp turmeric powder
Water for cooking

For grinding :

1 tbsp urad dal
1 tbsp chana dal
2 Red chilllies
1 tsp coriander seeds
1 tsp til
4-5 fenugreek seeds
1 tbsp jeera
2-3 pepper

For seasoning :

1 tbsp oil
1 tsp mustard seeds
1 tbsp urad dal
2 tbsp peanuts

Method :

* In a kadai put the veges , peanuts , dal , turmeric powder , salt and let it cook ( can also cook in a pressure cooker )
* Dry roast the ingredients for grinding and grind them with little water
* When the veges are cooked add this grinded mixture
* Let it boil
* Heat oil in a kadai and prepare the seasoning
* Roast the peanuts in the oil itself till brown in colour
* Add little asafoetida powder if desired
* Put the seasoning in the kootu and remove from heat
* Serve with rice .
* It goes very well with Dosa / idli too !!

Milagai Bhajji


Ingredients :
2 Long Peppers
1/4 cup besan flour
2/4 cup rice flour
salt as per taste
1 tbsp red chilly powder
A pinch of asafoetida
A pinch of turmeric powder
Water to mix
Oil to make Bhajji
Method :
* Cut the peppers into finger length pieces
* Mix all the dry ingredients , add water and make the batter a little thick consistency
* Heat oil in a kadai
* Dip the pepper piece in the batter and fry it in the oil
* Cook till both sides turn brown and Drain the excess oil
* Serve hot with coconut chutney !!!!

Vermicelli kheer


Ingredients :

1 Cup Vermicelli (broken )
2 Cups milk
1 Cup sugar
2 tbsp ghee
1 tbsp raisins, cashews .
A pinch of Elachi powder.

Method :

* In a kadai heat 1 cup of milk and add the vermicelli
* Let it cook
* Add the remaining milk little my little and cook till done
* Add the sugar and stir well
* Remove from heat
* Heat a kadai and heat the ghee
* Roast the nuts , elachi powder and add it to the kheer
* Serve hot or Chill !!

Potato-Onion Curry


Ingredients :
2 Large potatoes
1 Medium onion
1 Medium tomato
2 Garlic pieces
Small ginger piece ( all chopped finely )
1 tbsp red chilly powder
Salt as per taste
For seasoning :
1 tbsp oil
1 tbsp mustard seeds
1 tbsp chana dal
Method:
* Boil the potatoes and peel the skin
* Mash them and keep it aside
* Heat oil in a kadai and prepare the seasoning
* Fry the onion with salt till they turn brown
* Add the tomatoes , ginger , garlic and chilly powder
* Cook till they are done
* Now add the potatoes add stir well
* Add some more oil and cook till nice aroma arise
* REmove from heat and garnish as you wish
* Serve hot with rice or even chapathis !!

Soya Chunks pulav

Ingredients :

1 Cup Basmati rice
1/2 Cup soya Chunks
1/2 Cup chopped veges
1 medium onion ( Chopped )
1 Medium tomato ( Chopped )
1 Green chilly (chopped finely )
Ginger - garlic paste
Salt as per taste
1 tsp Pepper-Jeera powder
Cilantro leaves for garnishing

For seasoning ;

1 tbsp oil
1 tbsp mustard seeds
1 tbsp urad dal / chana dal

Method:

* Cook Basmati rice seperately and keep it aside
* Cook the soya chunks and keep it aside
* Heat oil in a kadai and prepare the seasoning
* Fry the onion with salt till half done
* Add the tomatoes , chilly , ginger-garlic paste and fry till cooked
* Add the veges and cook by covering the kadai ( without adding water )
* Finally add the soya and stir gently
* Add the rice and stir gently
* Finally add the pepper-jeera powder as desired
* Garnish with coriander leaves
* Serve hot with your favourite side dish
* This is a very healthy and tasty rice which attracts even children !!

Banana Dosa


Ingredients :

2 Riped bananas
1 Cup maida flour
1/4 cup rice flour
1/2 cup sugar (or as per taste )
A pinch of baking soda
Little vanilla essence / a pinch of Elachi powder
Milk as required
Oil/ghee to make dosas

Method :

* Mix all the dry ingredients
* Peel and Mash well the bananas
* Add to the mixture and add the milk
* Make the batter into a medium thick batter consistency
* Heat a dosa griddle and grease it with oil or ghee
* Pour the dosa batter from outer to inner circle
* Pour ghee / oil over its sides
* cook till both sides turn light brown
* Remove from heat and serve hot !!

Spicy Chana Dal Gravy

This is one of my favourite recipe , which i learnt from my friend hema . Thanks for the wonderful recipe hema !!

Ingredients :

1 cup Channa dal(half cooked)
1 large onion,
1 medium-sized tomato
1-2 green chillies, ( all finely chopped )
1 tbsp ginger-garlic paste
2 tbsp light cooking oil
fresh coriander leaves- chopped for garnishing
water
salt as per taste

For Paste 1 :

6 tbsp coriander seeds
1 tsp cumin seeds
1 tbsp pepper corns
2 tbsp Rice
Whole red chillies- 8 to 9
Whole garam masalas
1 tbsp Mustard
1 tbsp channa dal
1 tbsp roasted gram

For paste 2 :

1/4 cup coconut
2 tbsp poppy seeds
1 tsp fennel seeds

Method :

* Roast all the Ingredients for the paste in a little oil.Allow them to cool and make a paste.
* Grind all ingrediants Which is given in paste 2 and keep aside
* Heat oil in a cooker and fry the chopped onions and green chillies till golden brown
* Add turmeric powder and ginger-garlic poaste and fry for 2 mins.
* Add chopped tomatoes and fry till the oil leaves the sides.
* Add the Ground paste 1 and fry till the paste turns slightly brown.
* Now Add Half cooked channa dal and fry for sometime.
* Add salt and water and mix well.
* Pressure cook for 15-20 minutes till dals are soft and done.
* open the cooker and add coconut paste 2 and let it come to a boil.
* GARNISH with fresh coriander leaves, and serve warm with paratha or chapathis

Bread Upma


Ingredients :
10 slices of bread
1 medium onion
1 medium tomato ( both chopped )
1 cup chopped veges -carrots , peas, beans , cauliflower , broccolli , cabbage , capsicum .
2-3 green chilly , slit lengthwise
Ginger , chopped finely
Salt as per taste
Chopped cilantro leaves for garnishing
For seasoning :
1 tbsp oil
1 tbsp mustard seeds
1 tbsp urad dal
Method :
* Roast all the slices of bread and cut them into small small squares
* Heat oil in a kadai and prepare the seasoning
* fry onion with salt
* Add the tomato , ginger , chilly and cook till done
* Add the veges , stir for a min and cook till they are soft by covering ( not adding water )
* When done add the bread pieces and stir gently
* Finally garnish with cilantro leaves and serve hot !!
* This serves as a nice and healty breakfast / snack !!

Cucumber kootu


Ingredients :

1 large cucumber
1 medium onion
1 medium tomato
Handful of chana dal ( kadala paruppu )
Salt as per taste
Cilantro leaves for garnishing
Water for cooking

For grinding :

1 tbsp coriander seeds
2 red chillies
1 tbsp jeera
4-5 fenugreek seeds
1 tbsp urad dal
1 tbsp chana dal

For seasoning :

1 tbsp oil
1 tbsp mustard seeds
1 tbsp urad dal

Method :

* Peel the skin and cut the cucumber into medium chunks
* Soak the chana dal for 10 mins
* Heat a kadai and prepare the seasoning
* Chop the onion and tomato into small pieces
* Add the onion , salt and fry till brown
* Add the tomato and cook till done
* Add the cucumber and water to cook and the dal
* Cover and let it cook till dal and vege is done
* Meanwhile roast and grind the items for grinding
* When the vege is cooked , add the grinded powder and let it boil
* After 2-3 mins add the cilantro leaves and remove from heat
* Serve hot with Rice !!

Spring onion curry


Ingredients :

4-5 Bunches of spring onions
2-3 tbsp besan flour
1 tbsp chilly powder
Salt as per taste

For seasoning :

1 tbsp oil
1 tbsp mustard seeds
1 tbsp urad dal

Method :

* Cut the spring onions into small pieces
* HEat oil in a kadai and prepare the seasoning
* Add the onions and cook only for 5 minutes
* Add the salt and chilly powder too
* Add the besan flour and cook for 2-3 mins by stirring gently
* Remove from heat and serve with rice !!

Vatha kozhambhu

INGREDIENTS :

Lemon size tamarind soaked in warm water
Finely chopped vege ( lady's finger / Shallots / sundakkai / Manathakkali etc )
1 tsp fenugreek seeds
1 tsp turmeric powder
2 tbsp sambar powder
Salt as required

For seasoning :
2 tbsp gingelly oil
1 tbsp mustard seeds
1 tbsp urad dal

METHOD :

* Extract the tamarind pulp and keep it aside
* HEat oil in a kadai and prepare the seasoning
* Fry the fenugreek seeds
* Cook the vege with salt
* Add the tamarind pulp and add the turmeric powder and sambar powder
* Let it boil till the amount reduces to 1/3.
* Remove from heat and can use it for 1 week by storing and refrigerator.

Vendhaya Kozhambhu

INGREDIENTS :

1 Tbsp Fenugreek seeds
1 Small onion
Lemon size of tamaring soaked in hot water
Salt as required
2 tbsp sambar powder
2 tbsp gingelly oil

For seasoning :
1 tbsp mustard seeds
1 tbsp urad dal

METHOD :

* Heat oil in a kadai and splutter the mustard seeds and fry the urad dal
* Fry the fenugreek seeds
* Add the onions and salt and cook till they turn brown
* Extract the tamarind pulp and add it in the kadai
* Add the turmeric powder and sambar powder
* Let it boil till the amount reduces into 1/3
* Remove from heat and serve it with hot rice and papad
* Can store this in a refrigerator for a week !!

Spinach Parantha


INGREDIENTS :
1 Cup Wheat flour
2 tbsp oil
1 tbsp salt
1 tsp saunf
1 tsp turmeric powder
1/2 tsp chilli powder
Warm water as required

For grinding :
1 Cup chopped spinach leaves
1 Garlic
1 Green chilly

METHOD :

* Heat a kadai and cook the spinach leaves for a minute
* Grind the second set of ingredients with little or no water
* In a vessel put all the dry ingredients and the grinded mixture
* Make the chapathi flour by adding the warm water little by little
* Keep it in the fridge for atleast 30 minutes
* Make soft paranthas and serve with your favourite side dish !!

Chow-Chow - Dry Beans ( mochai kottai ) Curry

INGREDIENTS :

1 Medium chow - chow
1/4 cup Dry Beans ( mochai kottai )
1 Green Chilly
Small piece Ginger
Asafoetida

FOR SEASONING :

1 tbsp oil
1 tsp Mustard seeds
1 tsp Urad dal

METHOD :

* Peel and Cut the Chow-chow into very small pieces
* Slit the Green chily and finely cut the ginger pieces
* Heat oil in a kadai and prepare the seasoning
* Put the chow-chow , dry beans , chilly and ginger into the kadai
* Add the salt
* Cover with a lid and stir in between till the vegetables are soft .
* Finally add the asafoetida and remove fron heat .
