VEGETABLE SAMOSA


Ingredients :

For stuffing :

1 Cup of chopped vegetables ( carrots , beans , corn, peas , cauliflower , potato , cabbage )
1 Medium onion
1 medium tomato
2 piece garlics
Ginger small piece ( all chopped finely )
Salt as per taste

Masalas:

1 tsp turmeric powder
1 tsp garam masala
1 tsp red chilly powder

For seasoning :

2 tbsp oil
1 tsp mustard seeds
1 tsp urad dal / chana dal
1 tsp jeera

For covering :

1 cup maida
1/4 cup rice flour
Salt ( little )
1 tbsp oil
Water ( to knead )

Oil for frying

Method :

* HEat oil in a kadai and prepare the seasoning
* Fry onion in the kadai with salt
* Add the tomato and the masalas and cook till done
* Add all the chopped veges and add little water
* Cook until they turn soft by covering the kadai
* Garnish with coriander leaves and remove from heat
* Let it cool
* Meanwhile knead a soft dough for the covering with the flour and the other items
* Make a thin circular discs ( like thin chapathis)
* Heat the oil for frying in a kadai
* Place a small amount of the filling in the discs
* Fold it in a triangular shape ( mine didnt come rightly though :-) )
* When the oil gets heated deep fry them .
* When both sides turn brown , drain excess oil and remove from heat
* Place it on a paper towel to absorb the remaining oil
* Serve hot with ketchup !!

Veggie somosa is okie..but using rice flour and tempering the mix is new to me...sounds interesting...gud one :)
