CARROT RICE - 1


INGREDIENTS :

1 Cup Basmati rice
2 medium carrots
2 medium tomatoes
1 Green chilly
Small piece Ginger
1 clove garlic
Salt as required
1 tsp turmeric powder
1 tsp coriander powder

FOR SEASONING :

1 Tbsp oil
1 tsp mustard seeds , urad dal

METHOD :

* Cook the Rice and keep it aside
* Grate the carrots finely and keep it aside
* Chop the chillies , tomato , ginger , garlic into fine pieces
* Heat a kadai and prepare the seasoning
* Fry the chillies, tomato , ginger, garlic with salt , turmeric powder and coriander powder
* When tomatoes are cooked add the carrots and cook till they are tender
* Add some curry leaves ( optional )
* Remove from heat and mix it with the rice
* Add some asafoetida powder if you wish
* Garnish with coriander leaves and serve hot with your favourite side dish !!
