VEGETABLE KURUMA


I love to have kuruma with idli / Chapathi / even with rice . But i did not know the correct procedure :( Recently i learnt the recipe from my school friend , kavitha ... She is a great cook and her blog has mouth watering recipes !! Here goes the recipe of kuruma :

INGREDIENTS :
1 Cup Chopped Vegetables ( Carrot , beans , fresh green peas , potato , cauliflower )
1 Medium onion , 1 medium tomato ( Finely chopped )
Salt as desired
1 tbsp Turmeric powder
1 tbsp garam masala

For grinding :
2 tbsp grated coconut
1 green chilly
2 cloves garlic
1 tsp poppy seeds
1 tbsp fennel seeds
1 piece ginger
1 piece cardamon

For seasoning :
1 tbsp oil
1 tbsp mustard seeds , 1 tbsp chana dal
1-2 Bay leaf

METHOD :
* Cook all the vegetables till soft ( not mushy )
* Grind the ingredients for grinding with little water
* Prepare the seasoning in a kadai
* Fry the onion with salt and turmeric powder , not till they turn brown
* Add the tomato and the garam masala , Cook till done
* Add the grinded masala and cook till the raw smell goes off
* Now add the cooked vegetables and stir gently
* Let it cook for 2-3 minutes
* Remove from heat, garnish with curry / coriander leaves
* Serve hot with Idlis / Chapathis or even rice

Wow raji! thank you very much for your comments. Special about this kurma is cumin seeds, that brings yummy taste to this kurma, isn't it???

try this with cumin seeds also, as i have posted, that taste will also be different
