COCONUT RICE

INGREDIENTS :

1 cup raw rice
1/4 cup grated coconut
2 tbsp peanuts
2 red chillies
1 tbsp oil
1 tbsp mustard seeds , channa dal
A pinch asafoetida
Salt as per taste

METHOD :

* Cook rice seperately and keep it aside spreaded on a vessel
* Heat oil in a kadai and prepare the seasoning
* Roast the peanuts till brown
* Then add the red chilllies
* Fry till done and finally add the grated coconut
* Fry for a minute
* Remove from heat and mix it with the rice
* Add the asafoetida and salt
* Mix gently
* Serve hot with papad/ thogayal !!
