INGREDIENTS :
1 Cup Basmati rice
2 Medium Brinjals
1 Medium onion
1 tsp turmeric salt
1 tsp Garam masala
1 tsp Chilli powder
For seasoning :
1 tbsp oil
1 tsp mustard seeds , urad dal
1 tsp fennel seeds
1/4 tsp fenugreek seeds
METHOD :
* Cook the Basmati rice seperately with 2 cups of water and keep it aside
* Slice the brinjals thinly and place it in a bowl of water ( to prevent it from turning black)
* Slice the onions thinly and keep it aside
* Heat a kadai and prepare the seasoning
* Fry the onions with salt , turmeric powder
* Then add the brinjals and all the masalas and fry till done
* When brinjals become tender remove from heat
* Mix it with rice , garnish as you wish .
* Serve hot with Raita !!
